A photographer documenting your holiday and a tour designed to teach photography serve different needs. Decide whether you mainly want to be in the pictures, learn to make them, or both.

If you want a record of your trip
A private photographer can focus on your group and the journey. Ask for examples showing people as well as wildlife, because a strong animal portfolio alone does not demonstrate relaxed family coverage. The arrangement should fit your existing operator's itinerary, with time for portraits and enough room for the crew.
If photography practice is the purpose
A photography-focused tour may devote long periods to particular subjects, light and camera technique. Before booking, ask the organizer about tuition, group size, vehicle occupancy and the experience level expected. A destination tour with a photographer present does not automatically include individual coaching.
If you want both
State the two objectives separately. Time spent teaching cannot always be spent documenting your family. Ask whether instruction is actually offered and how the day would be divided. A useful brief might prioritize personal coverage on two days while leaving your own photography independent on the rest, rather than expecting one person to do everything simultaneously.
